Most export issues are quickest to resolve when the report includes:

Large exports are processed in the background and assembled into a single file, so the progress bar can sit on a step for a while on big searches. Word documents are the slowest format to assemble. If an export appears to have stalled entirely, tell us the search and the format and we'll look into it.
No. There is no row cap — the export is chunked and assembled server-side within Atlassian.
Scheduled runs appear under Recent scheduled runs in the export dialog, where you can download each one. Two things to check first: that the schedule is toggled on, and that the hour you picked has actually passed — schedule times are in UTC, not your local timezone.
No, by design. Tablet makes no external network calls, which is what keeps your issue data inside Atlassian and qualifies the app for Runs on Atlassian. Scheduled runs are kept in the in-app run history for you to download instead.
Nowhere outside Atlassian. Tablet reads only the issues your own Jira account can already see, and stores only your templates, your schedules, and short-lived export working data in Atlassian-hosted storage. See the privacy policy for the detail.
